Ooohhh… Hawaii – let’s go

Planning a trip to Hawaii.
In my mind.
Meanwhile I will make some beautiful Hawaiian Poke bowls (pronounced po-kee or po-kay).

It is all about freshly caught raw fish (also octopus, squid, crap, white, red, whatever fish fresh from the boat you can get – and love).

I got very inspired by the veggie specialist, chef Sarah Britton to make a veggie version of the dish too. Which I share with you on all the pictures – find her Poke vegan version recipe here. It taste and looks so perfect – I love how she has found beets ind a “tuna” red color. LOVELY!

I’m not only into veggies. I eat a rainbow of proteins (from meats, poultry, fish etc.), healthy oils and veggies every day. That makes both versions perfect suitable to me.

WHAT IS POKE?
It is pure simple and easy: poke means ” to slice or cut the fish crosswise into pieces”. Small fine squares just a bite size of high quality raw fish.

Dressed and spiced up with a mayo for a creamy version (lovely with a tiny bit of wasabi!) or like the classic version below.

CLASSIC POKE
4 portions: 500 grams of fresh fish suitable for raw food – no bones or skin (your choice: tuna, dorado, salmon etc.). Make sure the fish is 100% fresh and suitable for raw food, always ask at your local fish shop.
Slice it crosswise the fish’s structures which looks like a fine pattern of “lines” – slice through the lines. Not “along” the lines. Octopus or crabs etc do not have “lines” you can just cut them into fine bite sizes.

DRESSING
1 dl. top from spring onions, the greens only – in ultra fine slices, 2 spsk. sesame oil, 3 spsk. glutenfree soya sauce, juice and zest from one organic lemon, good sea salt – fresh ground peber to taste. Mix it up. Sesame seeds for topping.

MAKE A RAINBOW
Make a simpel – a really fast – but BEAUTIFUL bowl with Poke and veggies – just think rainbow! All kind of colors side by side. One bowl per person.

Bottom base = a handful of green leafs: spinach, kale, crisp salats, maybe a bit brown rice or quinoa mixed with the salads.

On top you make the rainbow: The poke – aprox 120 grams per person/per bowl, plus different veggies you have already. Fine sliced carrots, a bit of extra onions in small chopped up sizes, a handful of fresh asparagus (pre cooked for 2-3 min.), red/yellow bell peppers, some cucumbers in ultra fine slices. Built it all up in a bowel, colors by colors – it takes 3 min and looks soooo pretty – easy peasy done. Top with sesame seeds or desiccated toasted coconut.

WELCOME BACK.
The summer is all over Copenhagen right now but I’m sitting inside by the computer again and working. I had the most wonderful and most relaxing holiday in years in July. Weeks in Provence was like a cleanse and now I’m back sitting by the desk in the studio I will keep on having the “cleanse healthy” feeling. Salads are all over but sometimes I need some alternative veggie recipies.

I found my juicer in the back of the kitchen and bought GREEN KITCHEN STORIE’s Smoothies mini e-book (released this summer). Love the yummi healthy veggie and fruity choices – the layout, all the pics are soooo edible (drink’eble!) and the 14 colorful inspiring recipes are Summer in a glas with a straw  – boosted with vitamins. Easy. Cleansing. I like ;o)

My favorite smoothie for breakfast or a quick “meal” in the afternoon is the Vegetable Garden. Look above: what a color! Sometimes I make it with one squash instead of cucumber! Recipe is at Page Five in the book. ENYOJ!

Adventures in Cooking

 

All I needed was a recipe for a hot autumn soup … and some color inspiration for a new edible design project. And then I came across this girl Eva Kosmas Flores who runs the blog Adventures In Cooking. OMG.

Look at those amazing photos …  I kept on and on looking into Eva’s cooking adventures – I wanted to taste, touch, try, do everything I saw…  and not just the delicious soup recipe I found! But I did find a fantastic recipe for an autumn soup with Roasted Pecan & Acorn Squash. I think it will become a classic around here.

This soup recipe have acorn squash, honey, pecans, and ground chipotle chili powder included – which I found new and VERY tasteful – hot, creamy, nutty mixed with the fruity squash. Yummi!

Savory book wishes

My clients Niels & Grete who are organic egg producers have learned me a lot about organic poultry farming, chickens’ wellbeing and needs and funny moods. My fridge always contains lots of their eggs and I make all kinds of Eggs-dishes – but I would love to add the above inspiration: CHICKEN and EGG by Janice Cole to my cook book self. I don’t know if we ever get our own chickens in our garden (read: need more time!), but if you are planing on having chickens this book is also very helpful. In Denmark we have Signe Wenneberg – she is an fantastic inspiration + expert on gardening and how to get started with poultry farming at home. Find her books at her website (all in Danish).

Yes, please, add more Feast and veggie colors into our kitchen… I especially find it hard to be inspired during the dark winter time. We do not have that many fresh, exotic vegetables here in Denmark during the wintertime (I like to eat and shop local + organic). I think FEAST – generous vegetarian meals for any eater and every appetite by Sarah Copeland will add some new + colorful energy to my vegetarian winter kitchen.

The last book: Waffles – sweet, savory, simple – by Tara Duggan. Well, I might getting old. I’m not and has never been a great fan of aebleskiver and now is the time get it OUT. Aebleskiver is a small fried round sweet “dumpling” cake-thing we Danes eat from now until Christmas. Again and again during December. With sucker, jam… sweet with sweet on – I’m not a fan! (Sorry mom!). But I love crepes (with basic toppings: lemon juice + sucker) and I have a thing for waffles with fresh berries or a splash of simple dark, bitter, thick chocolate sauce. I think it is about time to add a new tool in my kitchen: a waffel maker (Santa: this one or this one please!). And the above book!

 

Yummi summer garden

The seasons are so different here in Copenhagen and this summer has been so great and full of sun. I actually look forward to the next season now…
